Tomatoes stuffed with rice and potatoes Gluten-free/milk-free/lactose-free

Anna: Dishes of lusciously coloured, stuffed vegetables are one of the joys of Italian cooking, and always among them are tomatoes. Try to get the

big knobby tomatoes, which have more flavour.

Michelle: Another delicious, naturally freefrom dish!

Serves 6

6 large ripe but firm tomatoes, each

weighing about 200g

sea salt and freshly ground black

pepper

a pinch of flaked chilli

60g uncooked Italian rice (eg Arborio,

Carnaroli, Vialone Nano)

5 tbsp extra virgin olive oil (with extra

for greasing the dish)

1 garlic clove, chopped

6 anchovy fillets, rinsed and chopped

1 tbsp flatleaf parsley, chopped

1 tbsp Sacla’ Free From Tomato Pesto

(contains soya)

2 large potatoes, cut into very small

cubes

2 tsp dried oregano
